  • 1 can (400g) chickpeas, drained and rinsed
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 cup crumbled feta cheese
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a mixing bowl, toss together zucchinis, chickpeas, bell pepper, and onion. Add olive oil, oregano, smoked paprika, salt, and pepper. Mix until well coated.
  3. Spread the mixture evenly on the prepared baking sheet. Roast for 25-30 minutes, tossing halfway through until tender and golden.
  4. Sprinkle crumbled feta over the roasted mixture and return to the oven for an additional 5 minutes until slightly melted.
  5. Garnish with fresh parsley before serving warm.
