- 1 kg beef (chuck or stewing beef), cut into chunks
- 3 tsp chicken bouillon powder
- 1 tsp salt
- 3 red bell peppers, deseeded
- 3 scotch bonnet peppers (adjust to taste)
- 1 medium onion
- 400 g canned tomatoes
- 1 cup vegetable oil
- 1/2 tsp curry powder (optional)
- 1 tsp oregano (optional)
- 1/2 tsp thyme (optional)
Instructions
- In a large pot, season the beef with salt and chicken bouillon powder. Add chopped onions and enough water to cover the beef. Boil until tender and reserve some broth.
- Blend the red bell peppers, scotch bonnet peppers, canned tomatoes, and onion until smooth.
- In another pot, heat vegetable oil over medium-high heat. Fry the blended pepper mixture for 15–20 minutes until thickened.
- Add the cooked beef and reserved broth to the pot along with optional spices. Simmer uncovered for another 15–20 minutes.
- Adjust seasoning as needed and serve hot over rice, yams, or plantains.
