  • 1 kg beef (chuck or stewing beef), cut into chunks
  • 3 tsp chicken bouillon powder
  • 1 tsp salt
  • 3 red bell peppers, deseeded
  • 3 scotch bonnet peppers (adjust to taste)
  • 1 medium onion
  • 400 g canned tomatoes
  • 1 cup vegetable oil
  • 1/2 tsp curry powder (optional)
  • 1 tsp oregano (optional)
  • 1/2 tsp thyme (optional)

Instructions

  1. In a large pot, season the beef with salt and chicken bouillon powder. Add chopped onions and enough water to cover the beef. Boil until tender and reserve some broth.
  2. Blend the red bell peppers, scotch bonnet peppers, canned tomatoes, and onion until smooth.
  3. In another pot, heat vegetable oil over medium-high heat. Fry the blended pepper mixture for 15–20 minutes until thickened.
  4. Add the cooked beef and reserved broth to the pot along with optional spices. Simmer uncovered for another 15–20 minutes.
  5. Adjust seasoning as needed and serve hot over rice, yams, or plantains.
