  • 1 teaspoon apple cider vinegar
  • 210g self-raising flour
  • 50g cocoa powder
  • 100g caster sugar
  • 60ml sunflower oil
  • 210g dairy-free block butter for frosting
  • 200g icing sugar
  • 20ml aquafaba (chickpea brine)
  • Ground Oreo crumbs for decoration

Instructions

  1. Preheat oven to 180°C (350°F) and line your cupcake tin with liners.
  2. Mix dairy-free milk with apple cider vinegar and let it sit for about 5 minutes.
  3. In a large bowl, whisk together self-raising flour, cocoa powder, caster sugar, baking powder, and bicarbonate of soda.
  4. Stir in the vegan buttermilk mixture and sunflower oil until just combined.
  5. Fill cupcake liners with batter and bake for 20-25 minutes until a toothpick comes out clean. Cool completely before frosting.
  6. Beat dairy-free butter and icing sugar in another bowl until fluffy; gradually add aquafaba for smoothness.
  7. Frost cooled cupcakes, sprinkle with ground Oreo crumbs, and decorate with melted dairy-free chocolate.
