  • 2 tablespoons oil (or water for oil-free)
  • 1 large onion (diced)
  • 3 large carrots (chunky pieces)
  • 2 ribs celery (diced)
  • 5 cloves garlic (minced)
  • 1 medium rutabaga (cut into chunky pieces)
  • 4 large potatoes (cut into chunks)
  • ¼ head green cabbage (shredded)
  • 4 cups vegetable stock
  • ¼ cup soy sauce
  • 2 large bay leaves
  • 2 sprigs fresh thyme (or 1 teaspoon dried)
  • 2 sprigs fresh rosemary (or 1½ teaspoons dried)
  • 9 oz (255 grams) OPTIONAL vegan beef or portobello mushrooms

Instructions

  1. Prep all ingredients by chopping vegetables and setting aside.
  2. In a Dutch oven over high heat, add oil and sear vegan beef or mushrooms until golden. Remove and set aside.
  3. Lower heat to medium and sauté onions, carrots, and celery until softened. Add garlic and cook for an additional minute.
  4. Sprinkle flour over the veggies and stir well to coat; cook for another minute.
  5. Gradually pour in vegetable stock while stirring to avoid lumps; bring to a gentle boil.
  6. Add rutabaga, potatoes, cabbage, soy sauce, salt, pepper, sugar, bay leaves, thyme, and rosemary; stir well.
  7. Simmer uncovered for 45–50 minutes until potatoes are tender.
  8. Ten minutes before serving, return seared vegan beef or mushrooms to the pot; adjust seasoning as needed.
  9. Serve hot after removing bay leaves.
