- 16 oz box multicolored rotini pasta
- 1/2–3/4 cup Italian dressing
- 1/2 cup roasted red peppers (diced)
- 1/2 yellow onion (diced)
- 2 oz can black olives (sliced)
- 1/2 large cucumber (peeled and diced)
- 12 slices chicken breast (chopped)
- 10 sticks cheddar cheese (chopped)
- 1 cup turkey sausage sticks (sliced thin)
- 1/4 cup grated Parmesan cheese
- Small pie pumpkin (for serving)
Instructions
- Boil water in a large pot and cook the rotini pasta according to package instructions until al dente. Drain and set aside to cool.
- While the pasta cools, chop the roasted red peppers, onion, cucumber, chicken breast, cheddar cheese sticks, and turkey sausage sticks. Add all chopped ingredients to a large mixing bowl.
- Once cooled, add the rotini pasta to the bowl with the chopped ingredients. Pour in Italian dressing and toss until well combined.
