  • 1/23/4 cup Italian dressing
  • 1/2 cup roasted red peppers (diced)
  • 1/2 yellow onion (diced)
  • 2 oz can black olives (sliced)
  • 1/2 large cucumber (peeled and diced)
  • 12 slices chicken breast (chopped)
  • 10 sticks cheddar cheese (chopped)
  • 1 cup turkey sausage sticks (sliced thin)
  • 1/4 cup grated Parmesan cheese
  • Small pie pumpkin (for serving)

Instructions

  1. Boil water in a large pot and cook the rotini pasta according to package instructions until al dente. Drain and set aside to cool.
  2. While the pasta cools, chop the roasted red peppers, onion, cucumber, chicken breast, cheddar cheese sticks, and turkey sausage sticks. Add all chopped ingredients to a large mixing bowl.
  3. Once cooled, add the rotini pasta to the bowl with the chopped ingredients. Pour in Italian dressing and toss until well combined.
  4. Taste and adjust seasoning by adding more dressing if desired.
  5. Transfer to a serving dish or directly into your small pie pumpkin for an attractive presentation. Sprinkle with grated Parmesan before serving.
