- 200 g dark chocolate
- 100 g brown sugar
- 50 g granulated sugar
- 3 eggs
- 90 g all-purpose flour (sifted)

- 1/2 tsp vanilla extract
- 2 shots espresso or instant coffee
- 250 g mascarpone cheese (room temperature)
- 240 ml heavy cream
- 50 g sugar (for topping)
- 1/4 tsp salt (for topping)
- 1/2 tsp vanilla extract (for topping)
- 2 tbsp espresso powder (for topping)
- Cocoa powder (for dusting)
Instructions
- Preheat your oven to 350°F/175°C and line an 8 or 9-inch square baking tin with parchment paper.
- In a microwave-safe bowl, melt the chopped dark chocolate and unsalted butter in intervals, stirring until smooth.
- Stir in both sugars until well combined.
- Add eggs one at a time, whisking until fully incorporated.
- Sift flour and salt into the mixture, gently folding until just combined.
- Pour the batter into the prepared tin and bake for 25–30 minutes, or until a toothpick comes out clean.
- After baking, poke holes in the surface and pour warm espresso over the brownies. Allow them to cool completely before adding toppings.
