  • 2 lbs fresh yellow peaches (about 67 peaches)
  • 2 tbsp lemon juice
  • 3/4 cup white granulated sugar
  • 1/4 cup + 1 tbsp tapioca starch
  • 1 tsp vanilla extract
  • 1 tsp smoked paprika
  • 1 tbsp unsalted butter (for topping)
  • Egg wash (1 egg yolk + 1 tbsp milk)

Instructions

  1. Prepare your pie crust by following a favorite recipe or using pre-made dough.
  2. Peel and cube the peaches into 1-inch pieces.
  3. In a large bowl, mix cubed peaches with lemon juice, sugar, tapioca starch, vanilla extract, and smoked paprika until well combined.
  4. Preheat your oven to 400°F (200°C).
  5. Roll out one disc of dough and fit it into a pie dish. Fill it with the peach mixture.
  6. Roll out the second disc of dough; cut into strips to create a lattice top over the filling.
