  • 1 lb ground chicken
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 green onions, finely chopped
  • 1 tbsp red curry paste
  • 1 tsp soy sauce
  • 1 egg
  • 1 tbsp cornstarch or panko breadcrumbs
  • 1 tbsp cilantro, chopped
  • Salt and pepper, to taste
  • 1 can (14 oz) coconut milk (full-fat)
  • 1 tsp brown sugar or honey

Instructions

  1. In a mixing bowl, combine ground chicken, garlic, ginger, red curry paste, soy sauce, egg, cornstarch or panko breadcrumbs, cilantro, salt, and pepper.
  2. Form the mixture into 1-inch meatballs and place on a baking sheet.
  3. Heat oil in a skillet over medium heat and cook the meatballs for about 4-5 minutes on each side until golden brown.
  4. Add coconut milk and brown sugar (or honey) to the skillet with any remaining juices and simmer for about 5 minutes.
  5. Return the meatballs to the skillet and let them simmer for an additional minute before serving.
