  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 1/4 cup evaporated milk
  • 1 tablespoon vanilla extract
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • whipped cream (for serving)

Instructions

  1. Prepare the crust by mixing flour, salt, and sugar. Cut in cold butter until crumbly, then add ice water and lemon juice. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  2. Cook sweet potatoes until tender. Cool slightly, then mash until smooth.
  3. In a mixing bowl, beat softened butter and dark brown sugar until creamy. Add mashed sweet potatoes, eggs, spices, salt, evaporated milk, and vanilla extract; mix well.
  4. Preheat oven to 350°F (175°C). Roll out the chilled dough and fit it into a pie dish. Fill with the sweet potato mixture.
  5. Brush crust edges with egg wash and bake for about 90 minutes or until set.
