Instructions
- Preheat oven to 400°F (200°C). Wash sweet potatoes, pierce with a fork, and bake directly on the rack for 45–50 minutes until tender.
- In a skillet over medium heat, heat olive oil and sauté the onion for 3–4 minutes. Add garlic and cook for an additional 30 seconds.
- Add the ground turkey to the skillet and cook until browned. Season with smoked paprika, chili powder, cumin, sea salt, and black pepper.
- Stir in black beans, corn, and diced tomatoes; simmer for 5–7 minutes.
- Once sweet potatoes are done baking, slice them open lengthwise and gently mash the flesh.
