- 400g pasta
- 2 roasted corn cobs
- 3 green onions
- 1 shallot
- 2 jalapeños
- ½ cup cilantro
- 1 cup cotija cheese
- 1 cup sour cream
- ½ cup mayonnaise
- Juice and zest of 1 lime
- 1 tsp smoked paprika
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Roast the corn on a frying pan with olive oil for about 10-15 minutes until golden brown. Remove kernels from cobs.
- Cook pasta in salted boiling water until al dente; drain and set aside.
- Prepare other ingredients: slice green onions, mince shallot, garlic, jalapeños, cilantro, and crumble cotija.
- In a bowl, mix sour cream, mayonnaise, minced garlic, lime juice and zest, smoked paprika, chili powder, salt, and pepper to make the dressing.
- Combine cooked pasta, roasted corn, green onions, shallot, jalapeños, cilantro, and cotija cheese in a large bowl. Pour dressing over the top and mix well.
