  • 1 cup fresh strawberries, chopped

  • 23 tbsp pureed strawberries (fresh or thawed frozen)
  • 1 tsp vanilla extract
  • A drop of pink food coloring (optional)

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a loaf or bundt pan.
  2. Cream together butter and sugar until fluffy. Add eggs one at a time, mixing well with each addition, followed by vanilla extract.
  3. In a separate bowl, combine flour, baking powder, baking soda, and salt. Gradually add to the wet mixture alternating with sour cream.
  4. Toss chopped strawberries in flour and gently fold into the batter.
  5. Pour batter into the prepared pan and bake for 60-70 minutes until a toothpick comes out clean.
  6. Allow cooling before glazing with a mixture of powdered sugar and pureed strawberries.
