  • 4 large eggs

  • 1 cup sour cream
  • 1 cup crushed pineapple (drained)
  • 1 ½ cups fresh strawberries (chopped)
  • 1 tsp almond extract (optional)
  • 1 tsp salt
  • 1 tbsp flour (to toss strawberries prevents sinking)
  • 1 cup crushed pineapple (with juice)
  • 1 cup fresh strawberries, sliced
  • 2 tbsp sugar
  • 1 tbsp cornstarch (for thickening)
  • 1 cup powdered sugar
  • 23 tbsp pineapple juice or milk
  • Pinch of salt

Instructions

  1. Prepare the fruit layer by heating crushed pineapple, sliced strawberries, sugar, and cornstarch in a saucepan until thickened. Set aside to cool.
  2. Preheat the oven to 325°F (163°C) and grease a Bundt or tube pan.
  3. Cream softened butter and sugar until fluffy. Add eggs one by one, mixing well after each addition along with vanilla extract.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually mix into the butter mixture alternating with sour cream.
  5. Fold in the drained pineapple and floured strawberries gently.
  6. Pour half of the batter into the prepared pan, followed by half of the fruit layer. Top with remaining batter and swirl in additional fruit if desired.
  7. Bake for 70-80 minutes or until a toothpick comes out clean.
  8. Cool for 15 minutes before transferring to a wire rack.
