  • 12 oz penne pasta
  • 1 lb chicken breast or shrimp
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1 ½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • Cajun seasoning and red pepper flakes (to taste)

Instructions

  1. Cook the penne in salted water until al dente. Reserve ½ cup of pasta water and drain.
  2. Season chicken or shrimp with salt, pepper, and Cajun seasoning. Sear in a skillet until cooked through; set aside.
  3. In the same skillet, sauté bell peppers and garlic in olive oil and butter for about 4 minutes.
  4. Add remaining spices and pour in heavy cream; simmer while stirring in Parmesan until creamy.
  5. Combine pasta and protein with the sauce, adding reserved pasta water as needed to achieve desired consistency.
  6. Serve garnished with fresh herbs and lime juice.
