  • 150g boneless, skinless chicken breast
  • 1 tsp olive oil
  • tsp paprika
  • tsp garlic powder
  • tsp cayenne pepper (adjust to spice preference)
  • Salt & black pepper, to taste
  • 1 cup uncooked white rice
  • 1 cup water
  • Pinch of salt
  • 1 cup sliced cucumber
  • 1 cup cherry tomatoes, halved
  • 2 tbsp diced red onion
  • 1 tsp chopped fresh parsley or dill
  • avocado, sliced
  • 1 tbsp spicy mayo (mayonnaise mixed with sriracha)

Instructions

  1. Rinse rice until water runs clear; combine with water and salt in a pot. Bring to a boil, reduce heat, cover, and cook for 12-15 minutes.
  2. In a skillet over medium-high heat, toss chicken with olive oil and spices. Cook for 6-8 minutes until golden and fully cooked.
  3. In a mixing bowl, combine cucumber, cherry tomatoes, red onion, parsley or dill; season with salt and pepper.
  4. Assemble the bowl: layer cooked rice, chicken pieces, avocado slices, and cucumber salad. Drizzle with spicy mayo before serving.
