  • 3 cans peaches in lite syrup (29 ounces each)
  • ½ cup salted butter
  • 1 cup granulated sugar
  • ½ teaspoon ground cinnamon
  • 1 teaspoon nutmeg
  • 1 tablespoon pure vanilla extract
  • 3 teaspoons all-purpose flour
  • 2 ½ cups all-purpose flour for crust
  • 2 teaspoons granulated sugar for crust
  • 1 teaspoon salt for crust
  • 1 cup very cold unsalted butter, cut in cubes
  • ½ cup very cold water
  • 1 egg (beaten with 1 teaspoon of water)
  • Ground cinnamon for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix canned peaches (with syrup), melted butter, sugar, cinnamon, nutmeg, vanilla extract, and flour until blended.
  3. In another bowl, combine flour, sugar, and salt for the crust. Cut in cold butter until crumbly; gradually add cold water to form dough.
  4. Roll out half the dough and line a greased 9×13 inch baking dish.
  5. Pour peach filling over the crust and roll out remaining dough to cover the top; seal edges.
  6. Brush top with beaten egg and sprinkle with cinnamon. Bake for 45 minutes until golden brown.
  7. Allow to cool slightly before serving.
