Ingredients
- 3 cans peaches in lite syrup (29 ounces each)
- ½ cup salted butter
- 1 cup granulated sugar
- ½ teaspoon ground cinnamon
- 1 teaspoon nutmeg
- 1 tablespoon pure vanilla extract
- 3 teaspoons all-purpose flour
- 2 ½ cups all-purpose flour for crust
- 2 teaspoons granulated sugar for crust
- 1 teaspoon salt for crust
- 1 cup very cold unsalted butter, cut in cubes
- ½–⅔ cup very cold water
- 1 egg (beaten with 1 teaspoon of water)
- Ground cinnamon for garnish
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix canned peaches (with syrup), melted butter, sugar, cinnamon, nutmeg, vanilla extract, and flour until blended.
- In another bowl, combine flour, sugar, and salt for the crust. Cut in cold butter until crumbly; gradually add cold water to form dough.
- Roll out half the dough and line a greased 9×13 inch baking dish.
- Pour peach filling over the crust and roll out remaining dough to cover the top; seal edges.
- Brush top with beaten egg and sprinkle with cinnamon. Bake for 45 minutes until golden brown.
- Allow to cool slightly before serving.
