  • 2 large eggs, at room temperature
  • 1/2 tsp kosher salt
  • 565g all-purpose flour
  • 100g unsalted butter, at room temperature
  • 850g – about four medium apples, peeled, cored, and diced small
  • 30g unsalted butter
  • 80g granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1 Tbsp corn starch
  • 125g pecan halves
  • 190g unsalted butter, at room temperature
  • 280g brown sugar
  • 2 Tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp kosher salt
  • 115g unsalted butter, at room temperature
  • 225g cream cheese, at room temperature
  • 250g powdered sugar, sifted
  • 12 Tbsp heavy whipping cream
  • 1/2 tsp kosher salt

Instructions

  1. In a mixing bowl, combine lukewarm milk and granulated sugar. Sprinkle active dried yeast on top. Let it sit until frothy (about 5-10 minutes).
  2. Add eggs and kosher salt to the yeast mixture. Mix well.
  3. Gradually add all-purpose flour while mixing until a soft dough forms.
  4. Incorporate unsalted butter into the dough and knead until smooth (about 5-7 minutes).
  5. In a saucepan over medium heat, melt 30g of unsalted butter.
  6. Add diced apples, granulated sugar, ground cinnamon, kosher salt, and corn starch. Stir gently until apples soften (about 5-7 minutes).
  7. Remove from heat and let cool slightly.
  8. Roll out the dough on a floured surface into a rectangle (about 16×24 inches).
  9. Spread softened unsalted butter evenly over the rolled-out dough.
  10. Sprinkle brown sugar mixed with ground cinnamon and salt across the surface.
  11. Evenly distribute apple filling over the dough followed by chopped pecans.
  12. Starting from one edge, carefully roll up the dough into a log shape.
  13. Cut into equal pieces (about 12) and place in a greased baking dish.
  14. Preheat your oven to 350°F (175°C).
  15. Allow rolls to rise for about 30 minutes before baking.
  16. Bake in preheated oven for approximately 25-30 minutes or until golden brown.
  17. In an electric mixer bowl, beat together softened butter and cream cheese until creamy.
  18. Gradually add sifted powdered sugar while mixing continuously.
  19. Adjust consistency with heavy whipping cream as needed.
  20. Once rolls are baked, remove from oven and let cool slightly.
  21. Drizzle cream cheese frosting generously over warm rolls before serving.
