- 2 large eggs
- 1 pound boneless skinless chicken breast
- 1 cup large shrimp
- Curry powder
- Soy sauce
- Oyster sauce
- Rice vinegar
- Sugar
Instructions
- Soak the rice vermicelli noodles in hot water for about 5 minutes until tender but firm. Drain and set aside.
- Whisk together soy sauce, oyster sauce, rice vinegar, and sugar in a bowl; set aside.
- Heat vegetable oil in a skillet over medium-high heat. Cook sliced chicken for 3-4 minutes until almost cooked through.
- Add shrimp and cook until pink (about 2-3 minutes). Remove both from the skillet.
- Sauté garlic and ginger in the same skillet for about 30 seconds.
- Stir-fry sliced onion, bell pepper, and carrots for about 5 minutes until tender-crisp.
- Push vegetables aside; scramble eggs in the empty space until cooked through.
- Toss in soaked noodles along with cooked chicken and shrimp; sprinkle curry powder and mix well.
