Ingredients
- 2 tbsp oil
- 1 1/2 cup dried white kidney beans
- 1 1/2 cup dried Romano beans
- 2 onions (finely diced)
- 2 carrots (shredded or diced)
- 4 cloves garlic (grated)
- 4 smoked sausages (roughly chopped)
- 1 dried bay leaf
- 2 1/2 tsp salt (or to taste)
- 1 tsp black pepper
- 1 tbsp smoked paprika
- 2 tbsp flour
Instructions
- Soak the dried beans in water for at least 6 hours. Drain and boil in fresh water for about 20 minutes; drain again.
- In a large pot, heat oil over medium heat and brown the chopped sausages for about 5 minutes. Remove and set aside.
- In the same pot, sauté onions and carrots until softened.
- Add soaked beans, browned sausages, bay leaf, and about 4 liters of water to the pot. Cook on medium heat for 40-45 minutes.
- In a separate pan, melt additional oil and sauté garlic before adding flour to create a roux with smoked paprika.
- Stir the thickener into the simmering soup and allow to cook for another 5 minutes.
- Serve hot, adjusting seasoning as needed.
