  • 1 tbsp garlic, minced
  • 1 white onion, sliced
  • Salt to taste
  • Sugar to taste
  • 200 g fresh beef, thinly sliced
  • 1 clove garlic, minced
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • 1 tsp cornstarch (for slurry)
  • 1 tsp Chinese white rice vinegar
  • 3 tbsp dark soy sauce
  • 2 tsp fresh ground black pepper
  • 3 tbsp water
  • 1/2 tsp potato starch

Instructions

  1. Marinate the beef: Combine minced garlic, sesame oil, soy sauce, Chinese white rice vinegar, and cornstarch slurry in a bowl. Coat the beef and let it marinate for 10 minutes.
  2. Prepare the udon: Boil water in a large pot and cook udon noodles for 1–2 minutes until slightly firm. Drain and set aside.
  3. Make the sauce: Mix dark soy sauce, water, black pepper, and potato starch in a small bowl.
  4. Stir-fry: Heat oil in a wok over medium heat. Sauté garlic and onions until soft. Add marinated beef; cook until browned (2–3 minutes). Pour in the black pepper sauce; stir until thickened.
  5. Combine: Toss cooked udon noodles and Chinese cabbage into the wok with the sauce until well-coated.
