- 1 tbsp garlic, minced
- 1 white onion, sliced

- Sugar to taste
- 200 g fresh beef, thinly sliced
- 1 clove garlic, minced
- 1 tsp sesame oil
- 1 tbsp soy sauce
- 1 tsp cornstarch (for slurry)
- 1 tsp Chinese white rice vinegar
- 3 tbsp dark soy sauce
- 2 tsp fresh ground black pepper
- 3 tbsp water
- 1/2 tsp potato starch
Instructions
- Marinate the beef: Combine minced garlic, sesame oil, soy sauce, Chinese white rice vinegar, and cornstarch slurry in a bowl. Coat the beef and let it marinate for 10 minutes.
- Prepare the udon: Boil water in a large pot and cook udon noodles for 1–2 minutes until slightly firm. Drain and set aside.
- Make the sauce: Mix dark soy sauce, water, black pepper, and potato starch in a small bowl.
- Stir-fry: Heat oil in a wok over medium heat. Sauté garlic and onions until soft. Add marinated beef; cook until browned (2–3 minutes). Pour in the black pepper sauce; stir until thickened.
