Description

Shrimp Stir Fry is a vibrant and healthful dish that brings together succulent shrimp, crisp vegetables, and a flavorful sauce in just 30 minutes.


Ingredients

  • 1 ½ pounds large shrimp (peeled and deveined)
  • ⅓ cup low sodium soy sauce
  • 2 tablespoons honey
  • 2 tablespoons minced fresh ginger
  • 4 cloves garlic (minced)
  • 2 carrots (julienne cut)
  • 1 red bell pepper (thinly sliced)
  • 8 ounces sugar snap peas
  • Olive oil

Instructions

  1. In a small bowl, whisk together soy sauce, honey, ginger, garlic, and cornstarch; set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Cook shrimp for about 2 minutes per side until pink; transfer to a plate.
  3. In the same skillet, add carrots, bell pepper, and sugar snap peas; sauté for 3 minutes until crisp-tender.
  4. Pour the prepared sauce into the skillet with vegetables and return shrimp; stir until heated through and sauce thickens.
  5. Serve over rice or noodles and garnish with green onions or sesame seeds if desired.
