- 2 tablespoons honey
- 2 tablespoons minced fresh ginger
- 4 cloves garlic (minced)
- 2 carrots (julienne cut)
- 1 red bell pepper (thinly sliced)
- 8 ounces sugar snap peas
- Olive oil
Instructions
- In a small bowl, whisk together soy sauce, honey, ginger, garlic, and cornstarch; set aside.
- Heat olive oil in a large skillet over medium-high heat. Cook shrimp for about 2 minutes per side until pink; transfer to a plate.
- In the same skillet, add carrots, bell pepper, and sugar snap peas; sauté for 3 minutes until crisp-tender.
- Pour the prepared sauce into the skillet with vegetables and return shrimp; stir until heated through and sauce thickens.
- Serve over rice or noodles and garnish with green onions or sesame seeds if desired.
