Ingredients

  • 1 cup cooked white rice (jasmine or basmati)
  • 1 lb ground beef (or ground turkey/chicken)
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp sesame oil or olive oil
  • Salt & pepper to taste
  • 1 cup broccoli florets
  • 1 cup zucchini, chopped
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, chopped
  • 1 cup sliced mushrooms
  • 1 tbsp soy sauce
  • 1 tsp olive oil
  • 1 tsp minced garlic

Instructions

  1. Cook rice according to package instructions and set aside.
  2. In a skillet over medium heat, add sesame oil and brown the ground beef. Stir in soy sauce, garlic powder, salt, and pepper until well combined.
  3. In another pan over medium-high heat, heat olive oil and sauté minced garlic followed by chopped vegetables. Stir-fry for 5-7 minutes until tender-crisp; splash with soy sauce and toss.
  4. Assemble your bowl with a scoop of rice topped with ground beef and stir-fried veggies.
