  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 3 large sweet onions, sliced
  • 4 tbsp unsalted butter
  • 2 cups low-sodium beef broth
  • 1 ½ cups Gruyère cheese, shredded
  • 2 tsp fresh thyme, chopped
  • Salt and pepper to taste
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. In a cast-iron skillet over medium heat, melt the butter and sauté the onions until golden brown. Add garlic and thyme; cook for an additional 1–2 minutes.
  3. Layer half of the sliced potatoes in the greased baking dish, followed by half of the onion mixture. Repeat with remaining potatoes and onion mix.
  4. Pour broth over all layers and top with shredded Gruyère cheese.
  5. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
  6. Let rest for about 10 minutes before serving.
