  • 6 beef sausages
  • 125g diced turkey bacon
  • 1 large white onion, diced
  • 2 medium carrots, diced
  • 2 cloves of garlic, finely diced
  • 3 tbsp butter
  • 3 tbsp plain flour
  • 480ml beef stock
  • 2 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/4 tsp dried rosemary
  • 1/4 tsp dried thyme
  • 1/4 tsp black pepper
  • 1 beef bouillon cube, crumbled
  • 400g baby potatoes, sliced
  • 1 tbsp melted butter
  • finely diced chives for garnish
  • salt to taste

Instructions

  1. In a large frying pan, cook diced turkey bacon over medium heat until crispy. Remove and set aside.
  2. Increase heat slightly and brown the beef sausages, then slice them before adding back to the pan.
  3. Sauté diced carrots and onion until softened, then add garlic and cook for an additional 30 seconds.
  4. Stir in flour to create a roux; gradually add beef stock while stirring to avoid lumps. Mix in Worcestershire sauce, mustard, herbs, turkey bacon, and sausages.
  5. Transfer mixture to a baking dish; layer sliced baby potatoes on top, brush with melted butter, and season with salt.
  6. Cover with foil and bake at 180°C (350°F) for 30 minutes; then remove foil and increase temperature to 200°C (400°F) for another 20 minutes until potatoes are tender.
