  • 1 cup all-purpose flour
  • 2 Tbsp granulated sugar
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp nutmeg
  • 1 1/2 cups whole milk
  • 1/2 cup pumpkin puree
  • 3 large eggs
  • 3 Tbsp unsalted butter, melted (plus more for pan)
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup confectioners' sugar
  • 3 Tbsp maple syrup
  • 1 cup heavy cream

Instructions

  1. In a blender, combine flour, sugar, salt, cinnamon, ginger, nutmeg, milk, pumpkin puree, eggs, melted butter, and vanilla. Blend until smooth.
  2. Allow the batter to rest for 30 minutes.
  3. Heat a nonstick skillet over medium heat and lightly grease it with butter. Pour about ¼ cup of batter into the skillet and tilt to cover the bottom evenly.
  4. Cook for 1 to 1½ minutes until edges are golden. Flip and cook for an additional minute. Remove from pan and repeat with remaining batter.
  5. For the filling, beat softened cream cheese with confectioners' sugar and maple syrup until smooth. Fold in whipped cream if desired.
  6. Fill each crepe with the cream cheese mixture before serving.
