  • Mini pumpkins or ramekins
  • 2 cups Heavy Cream
  • 1/3 cup Granulated Sugar
  • 4 large Egg Yolks
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Salt

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. If using mini pumpkins, cut off the tops and scoop out the seeds.
  3. In a mixing bowl, whisk together heavy cream and granulated sugar until smooth. Gradually blend in egg yolks, followed by vanilla extract, pumpkin puree, cinnamon, ginger, and salt.
  4. Pour the mixture into prepared containers about three-quarters full.
  5. Place the filled containers in a baking dish and add hot water halfway up their sides for a gentle cooking method.
  6. Bake for approximately 30 minutes until set but still slightly jiggly in the center.
  7. Allow to cool at room temperature before refrigerating for at least 2 hours.
  8. When ready to serve, sprinkle sugar on top and use a kitchen torch to caramelize until golden brown.
