  • 4 mini pumpkins (or ramekins)
  • 2 cups heavy cream
  • 1/3 cup granulated sugar (plus extra for topping)
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Prepare mini pumpkins by cutting off the tops and scooping out seeds; place them on a baking tray.
  3. In a saucepan, heat heavy cream and sugar over medium heat until warmed, stirring until sugar dissolves.
  4. In a mixing bowl, whisk together egg yolks, vanilla extract, pumpkin puree, spices, and salt.
  5. Gradually pour warm cream mixture into egg yolk mixture while whisking continuously to avoid cooking the eggs.
  6. Pour custard into prepared pumpkins or ramekins until three-quarters full.
  7. Place filled containers in a baking dish with hot water and bake for approximately 30 minutes until set but slightly jiggly in the center.
  8. Cool at room temperature before refrigerating for at least 2 hours.
  9. Before serving, sprinkle sugar on top and use a kitchen torch to caramelize until golden brown.
