Ingredients
- 15 whole rectangular graham crackers
- 1/4 cup granulated sugar
- 8 tablespoons unsalted butter (melted)
- 1–1/4 cups pumpkin puree
- 1–1/2 teaspoons pumpkin pie spice
- 1–1/2 teaspoons ground cinnamon
- 1 tablespoon all purpose flour
- Three 8-oz packages full fat cream cheese (at room temperature)
- 1–2/3 cup granulated sugar
- 1–1/2 teaspoons pure vanilla extract
- 1/2 cup full fat sour cream
- 1/8 teaspoon salt
- 3 large eggs (at room temperature)
Instructions
- Preheat your oven to 350°F. Line a 9×13 baking pan with foil and lightly grease the foil to prevent sticking.
- In a mixing bowl, crush the graham crackers until fine crumbs form. Add granulated sugar and melted butter to the crumbs. Mix until combined. Press this mixture firmly into the bottom of the prepared pan.
- In another large bowl, beat the cream cheese until smooth using an electric mixer. Gradually add in granulated sugar while mixing until fully combined. Add pumpkin puree, pumpkin pie spice, ground cinnamon, flour, vanilla extract, sour cream, and salt; mix well. Once mixed thoroughly, add eggs one at a time while blending just until incorporated.
- Pour half of the cheesecake filling over the crust in an even layer. Drop spoonfuls of remaining filling over it to create swirls; use a knife to swirl gently.
- Bake in preheated oven for about 50 minutes or until set but slightly jiggly in the center. Allow cooling completely at room temperature before refrigerating for at least four hours or overnight for best results. Cut into bars and serve chilled or at room temperature.
