Ingredients

  • 2 chicken breasts
  • 2 medium sweet potatoes
  • 1 ripe avocado
  • 150g cherry tomatoes
  • 4 tbsp plain Greek yogurt
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • Juice of lime
  • 1 tbsp ground cumin
  • Red onion, finely chopped
  • 1 tbsp chopped cilantro
  • 1 tsp lemon juice
  • 1 tsp chopped fresh mint or parsley

Instructions

  1. Preheat the oven to 200C (400F).
  2. Toss sweet potato wedges in olive oil, cumin, paprika, salt, and pepper; spread on a baking sheet and roast for about 25 minutes.
  3. Season chicken strips with olive oil, lime juice, smoked paprika, garlic powder, salt, and pepper; grill for 5-6 minutes per side until cooked through.
  4. Combine diced avocado, halved cherry tomatoes, chopped red onion, lime juice, cilantro, salt, and pepper in a bowl for the salsa.
  5. Mix Greek yogurt with lemon juice and chopped mint or parsley for a refreshing dip.
  6. Assemble by layering grilled chicken and sweet potato wedges in bowls topped with salsa and yogurt dip.
