  • 1 medium onion
  • 4 medium potatoes
  • 3 fresh eggs
  • 4 tablespoons all-purpose flour
  • Sea salt and freshly ground black pepper
  • 6 ripe tomatoes
  • 150g fresh mozzarella cheese
  • Fresh dill
  • Olive oil for frying

Instructions

  1. Grate the onion and potatoes into a mixing bowl.
  2. Add eggs, salt, pepper, and flour; mix until combined.
  3. Heat olive oil in a non-stick pan over medium heat.
  4. Form pancakes from the potato mixture and cook for about 2 minutes on each side until golden brown.
  5. Meanwhile, preheat the oven to 200°C (400°F) and mix diced tomatoes with half the mozzarella and dill.
  6. Assemble pancakes with tomato mixture, top with remaining mozzarella, and bake for 15 minutes until cheese is melted.
  7. Serve warm with extra dill if desired.
