- 4 medium potatoes
- 3 fresh eggs
- 4 tablespoons all-purpose flour

- 150g fresh mozzarella cheese
- Fresh dill
- Olive oil for frying
Instructions
- Grate the onion and potatoes into a mixing bowl.
- Add eggs, salt, pepper, and flour; mix until combined.
- Heat olive oil in a non-stick pan over medium heat.
- Form pancakes from the potato mixture and cook for about 2 minutes on each side until golden brown.
- Meanwhile, preheat the oven to 200°C (400°F) and mix diced tomatoes with half the mozzarella and dill.
- Assemble pancakes with tomato mixture, top with remaining mozzarella, and bake for 15 minutes until cheese is melted.
