  • 1 3.4 oz. box instant pistachio pudding
  • 4 eggs
  • 1/4 cup vegetable oil
  • 2 tbsp. water
  • 1 cup sour cream
  • 3/4 cup maraschino cherries (halved)
  • 2 cups powdered sugar
  • 22 1/2 tbsp. milk
  • 1 tsp. almond extract

Instructions

  1. Preheat your oven to 350°F and grease two small loaf pans.
  2. In a large mixing bowl, combine yellow cake mix and instant pistachio pudding. Add eggs, vegetable oil, water, and sour cream; beat until smooth.
  3. Drain and dry maraschino cherries before gently folding them into the batter. Divide the batter between the prepared loaf pans.
  4. Bake for 35-40 minutes or until a toothpick inserted comes out clean. Cool on a wire rack before removing from pans.
  5. For the glaze, whisk together powdered sugar, milk, and almond extract until smooth. Drizzle over cooled loaves.
