  • 3 large eggs (room temperature)
  • 3 Tablespoons all-purpose flour
  • 1 ½ cup peach puree (about 3 medium peaches)
  • Homemade whipped cream (for topping)
  • ¼ cup granulated sugar (for topping)
  • ¼ cup water
  • 1 cup peach puree (for topping)
  • 1 ½ cups peaches (peeled and sliced)
  • 1 Tablespoon cornstarch
  • ½ teaspoon pure vanilla extract (for topping)

Instructions

  1. 1. Preheat oven to 350°F and prepare a 9” springform pan.
  2. 2. Mix graham cracker crumbs, sugar, and melted butter; press into the pan.
  3. 3. Beat cream cheese until smooth; add sugar, vanilla, salt, sour cream, eggs one at a time, flour, and peach puree. Mix until combined.
  4. 4. Pour filling over crust and bake for about 60 minutes until set.
  5. 5. Cool completely before refrigerating for at least four hours.
  6. 6. Prepare topping by cooking sliced peaches with sugar, water, cornstarch, and peach puree until thickened.
