- 4 to 4 1/2 lbs peaches (about 14–18 medium)
- ½ cup water
- 4 cups granulated sugar
Instructions
- Rinse peaches under cool water and blanch them in boiling water for 30-60 seconds. Transfer to cold water to cool and then peel.
- Cut peaches in half, remove pits, and peel away the skins.
- Chop peaches into smaller pieces and place them in a large saucepan with ½ cup of water. Simmer over medium heat until soft.
- Blend the cooked peaches into a smooth pulp using a food processor or immersion blender.
- In a large saucepan, combine 2 quarts of peach pulp with 4 cups of granulated sugar, stirring until dissolved.
- Bring the mixture to a soft boil, then reduce heat and cook until thickened (it should mound slightly on a spoon).
- Ladle hot peach butter into sterilized jars, leaving about a ¼” headspace if canning, and process in a water bath canner for 10 minutes if desired.
