Description

Peach butter is a delightful homemade spread that embodies the essence of summer with its luscious, sweet flavor. This smooth and rich fruit butter is perfect for spreading on toast, pancakes, or using as a topping for desserts.


Ingredients

  • 4 to 4 1/2 lbs peaches (about 1418 medium)
  • ½ cup water
  • 4 cups granulated sugar

Instructions

  1. Rinse peaches under cool water and blanch them in boiling water for 30-60 seconds. Transfer to cold water to cool and then peel.
  2. Cut peaches in half, remove pits, and peel away the skins.
  3. Chop peaches into smaller pieces and place them in a large saucepan with ½ cup of water. Simmer over medium heat until soft.
  4. Blend the cooked peaches into a smooth pulp using a food processor or immersion blender.
  5. In a large saucepan, combine 2 quarts of peach pulp with 4 cups of granulated sugar, stirring until dissolved.
  6. Bring the mixture to a soft boil, then reduce heat and cook until thickened (it should mound slightly on a spoon).
  7. Ladle hot peach butter into sterilized jars, leaving about a ¼” headspace if canning, and process in a water bath canner for 10 minutes if desired.
