  • 8 oz. cream cheese (for icing)
  • 1/2 cup butter (softened)
  • 2 cups powdered sugar (sifted)
  • 1 tsp. vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a bowl, beat together eggs, sugar, vegetable oil, and pumpkin until smooth.
  3. In another bowl, mix flour, baking powder, cinnamon, and salt.
  4. Combine wet and dry ingredients gently until just mixed.
  5. Spread batter into the prepared dish and bake for about 30 minutes or until a toothpick comes out clean.
  6. Allow cooling completely before making the icing by beating cream cheese and butter together, then adding powdered sugar and vanilla.
  7. Frost the cooled bars and cut into squares.
