  • 1 cup dry ditalini pasta
  • 1 pound extra lean ground beef
  • 1 large onion (about 1½ cups)
  • 2 medium carrots (peeled and diced)
  • 3 stalks celery (diced)
  • 1 tablespoon minced garlic
  • 1 (28-ounce) can tomato sauce
  • 4 cups chicken broth
  • 1 (15-ounce) can diced tomatoes
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon dried marjoram
  • 1 (15-ounce can) dark red kidney beans (drained and rinsed)
  • 1 (15-ounce can) great northern beans (drained and rinsed)
  • Salt and pepper to taste

Instructions

  1. In a skillet or slow cooker with browning function, heat olive oil and brown the ground beef with diced onions, carrots, and celery until the meat is no longer pink.
  2. Toss the dry ditalini pasta with olive oil in a microwave-safe bowl and microwave on 30% power until blistered (3-5 minutes).
  3. Add the browned meat mixture, toasted pasta, tomato sauce, chicken broth, diced tomatoes, beans, and spices into the crock pot. Stir well.
  4. Cover and cook on low for 2 to 3 hours or until the pasta is tender. Adjust seasoning before serving.
