- 1 tablespoon olive oil
- 1 cup dry ditalini pasta
- 1 pound extra lean ground beef
- 1 large onion (about 1½ cups)
- 2 medium carrots (peeled and diced)
- 3 stalks celery (diced)
- 1 tablespoon minced garlic
- 1 (28-ounce) can tomato sauce
- 4 cups chicken broth
- 1 (15-ounce) can diced tomatoes
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- ½ teaspoon dried marjoram
- 1 (15-ounce can) dark red kidney beans (drained and rinsed)
- 1 (15-ounce can) great northern beans (drained and rinsed)
- Salt and pepper to taste
Instructions
- In a skillet or slow cooker with browning function, heat olive oil and brown the ground beef with diced onions, carrots, and celery until the meat is no longer pink.
- Toss the dry ditalini pasta with olive oil in a microwave-safe bowl and microwave on 30% power until blistered (3-5 minutes).
- Add the browned meat mixture, toasted pasta, tomato sauce, chicken broth, diced tomatoes, beans, and spices into the crock pot. Stir well.
