  • 8 small to medium zucchinis
  • 1 cup panko breadcrumbs
  • 1 cup freshly grated Parmesan cheese
  • ¼ cup mayonnaise
  • 2 tablespoons extra virgin olive oil
  • Kosher salt and black pepper, to taste
  • 1 teaspoon dry parsley
  • 1 teaspoon dry oregano
  • 1 teaspoon dry basil
  • ½ teaspoon garlic powder

Instructions

  1. Preheat the oven to 375°F (190°C) and position the rack in the top third.
  2. Line a baking sheet with foil and place a rack inside; spray lightly with cooking spray.
  3. Cut zucchinis lengthwise into quarters to create wedges.
  4. In a bowl, mix panko, Parmesan, salt, pepper, parsley, oregano, basil, and garlic powder.
  5. In another bowl, combine mayonnaise and olive oil until smooth.
  6. Brush the mayo mixture onto the cut sides of each zucchini wedge; coat with breadcrumb mixture.
  7. Place wedges cut side up on the prepared baking sheet and spray tops lightly with cooking spray.
  8. Bake for 30 minutes total, rotating halfway through; broil for an additional minute if desired.
