Ingredients
- 4 chicken breasts (about 600g)
- 2 tbsp olive oil
- Salt & pepper, to taste
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 200g mushrooms, sliced
- 2 garlic cloves, minced
- 1 tbsp flour
- 250ml chicken stock
- 1 tsp dried thyme
- 800g potatoes, peeled and cubed
- 50g butter
- 100ml milk
Instructions
- Boil cubed potatoes in salted water until tender. Drain and mash with butter and milk; season with salt and pepper.
- Season chicken breasts with salt and pepper. In a skillet, heat olive oil over medium-high heat. Sear chicken until golden brown on both sides; remove from skillet.
- In the same skillet, sauté onions, peppers, and mushrooms until softened. Add minced garlic; cook briefly.
- Sprinkle flour over veggies; stir well then gradually add chicken stock while stirring continuously until thickened.
- Return the chicken to the skillet with the gravy; simmer for a few minutes before serving.
