Ingredients
- 1 lb boneless, skinless chicken breast
- 2 tablespoons olive oil
- 1½ cups long-grain white rice
- 1 can (10 oz) Rotel diced tomatoes with green chilies
- 2¼ cups chicken broth
- 1 cup nacho cheese sauce
- 1½ cups shredded cheddar cheese
Instructions
- Heat olive oil in a large pot over medium heat. Add the chicken and season with garlic powder, onion powder, chili powder, cumin, salt, and pepper. Sauté for 5–6 minutes until nearly cooked.
