  • 1/3 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons avocado oil (or olive oil)
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 8 ounces grape tomatoes, halved
  • 8 ounces fresh mozzarella balls
  • 2 pounds boneless, skinless chicken breasts

Instructions

  1. Preheat your oven to 400°F.
  2. In a bowl, whisk together balsamic vinegar, honey, avocado oil, garlic, Italian seasoning, salt, and pepper.
  3. Toss tomatoes and mozzarella with salt and pepper in another bowl; set aside.
  4. Heat oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper.
  5. Sear the chicken for 1-2 minutes on each side until golden brown; add the balsamic sauce to the skillet and simmer briefly.
  6. Remove from heat and layer the tomato-mozzarella mixture on top of the chicken.
  7. Bake uncovered for 18-23 minutes until the chicken reaches an internal temperature of 165°F.
