  • 3/4 teaspoon kosher salt
  • 1 cup old-fashioned rolled oats
  • 1 and 1/4 cups blended rolled oats (oat flour)
  • 2 and 1/2 cups semisweet chocolate chips

Instructions

  1. Preheat your oven to 325°F (165°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter until creamy, then add brown sugar and mix until fluffy.
  3. Incorporate the egg, egg yolk, and vanilla extract, mixing well.
  4. Gradually add flour, baking soda, baking powder, and salt without fully mixing.
  5. Fold in whole oats followed by blended oats (oat flour).
  6. Gently mix in chocolate chips until just combined.
  7. Shape the dough into balls about 2 inches across and place them on prepared sheets with space in between.
  8. Bake for 9-10 minutes until edges are firm but centers still look shiny.
  9. Allow cookies to set on pans for several minutes before transferring to wire racks.
