  • 4 tbsp butter
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • Salt to taste

Instructions

  1. Cook the rigatoni according to package instructions; drain and set aside.
  2. Toss chicken pieces with Cajun seasoning, paprika, garlic powder, and black pepper.
  3. In a large skillet, melt 2 tbsp butter over medium-high heat, then sauté the seasoned chicken until golden brown (about 6-8 minutes). Remove from skillet.
  4. In the same skillet, melt remaining butter, add minced garlic and cook until fragrant. Whisk in flour to create a roux.
  5. Gradually whisk in milk and chicken broth; bring to a simmer while stirring constantly.
  6. Stir in cream cheese until melted and smooth, then add shredded mozzarella and Parmesan until combined.
  7. Combine cooked rigatoni and sautéed chicken with the sauce; mix well.
