  • 1 cup finely shredded zucchini
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup granulated sugar (for cinnamon swirl)
  • 1 Tablespoon cinnamon (for cinnamon swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×5 loaf pan with parchment paper.
  2. In a large bowl, mix together zucchini, eggs, vegetable oil, Greek yogurt, and vanilla extract until well combined.
  3. In another bowl, whisk together flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. Gradually add the dry ingredients to the wet mixture; stir until just combined.
  5. For the cinnamon swirl mixture, combine granulated sugar and cinnamon in a small bowl.
  6. Pour half of the batter into the prepared pan, sprinkle half of the cinnamon-sugar mixture on top, then add remaining batter and finish with the rest of the swirl mixture.
  7. Use a knife to gently swirl through both layers.
  8. Bake for 60-65 minutes or until golden brown; check doneness with a toothpick.
  9. Allow to cool before slicing.
