- 1 cup finely shredded zucchini
- 2 eggs
- 1/2 cup vegetable oil
- 1/2 cup plain Greek yogurt
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1/2 cup granulated sugar (for cinnamon swirl)
- 1 Tablespoon cinnamon (for cinnamon swirl)
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×5 loaf pan with parchment paper.
- In a large bowl, mix together zucchini, eggs, vegetable oil, Greek yogurt, and vanilla extract until well combined.
- In another bowl, whisk together flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves.
- Gradually add the dry ingredients to the wet mixture; stir until just combined.
- For the cinnamon swirl mixture, combine granulated sugar and cinnamon in a small bowl.
- Pour half of the batter into the prepared pan, sprinkle half of the cinnamon-sugar mixture on top, then add remaining batter and finish with the rest of the swirl mixture.
- Use a knife to gently swirl through both layers.
- Bake for 60-65 minutes or until golden brown; check doneness with a toothpick.
