  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 2 pounds lean ground beef (or a mix of ground chicken/turkey)
  • 1/2 cup milk
  • 2 large eggs
  • 3/4 cup breadcrumbs
  • 2 tablespoons ketchup
  • 1 1/2 teaspoons Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 350°F.
  2. In a skillet over medium heat, melt butter and sauté the chopped onions until softened, about 3-4 minutes. Add minced garlic and cook for an additional 30 seconds; remove from heat.
  3. In a large mixing bowl, combine the sautéed onions and garlic with ground beef, milk, eggs, breadcrumbs, ketchup, Italian seasoning, salt, black pepper, and parsley. Mix gently until just combined.
  4. Transfer the mixture into a loaf pan, smoothing the top.
  5. Bake for about 40 minutes.
  6. For the glaze, mix together ketchup, brown sugar, and apple cider vinegar in a small bowl while the meatloaf bakes.
  7. After 40 minutes of baking, spoon the glaze over the meatloaf and return it to the oven for another 20-30 minutes until cooked through.
  8. Allow resting for 10 minutes before slicing and serving with extra parsley if desired.
