  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • ¼ cup ketchup
  • 2 cups fresh mushrooms, sliced
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups beef broth
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking dish.
  2. In a mixing bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, ketchup, and salt and pepper. Mix gently until just combined.
  3. Shape the mixture into a loaf and place it in the prepared dish. Bake for about 50-60 minutes or until the internal temperature reaches 160°F (71°C).
  4. While the meatloaf bakes, melt butter in a skillet over medium heat. Add mushrooms and sauté until golden brown. Stir in flour and cook for another 2 minutes.
  5. Gradually whisk in beef broth and cook until thickened. Season to taste.
  6. Let the meatloaf rest before slicing and serve with mushroom gravy.
