- 4 lamb shanks
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 carrots, chopped
- 3 celery stalks, chopped
- 6 garlic cloves, minced
- 2 tablespoons tomato paste
- 2 cups apple vinegar
- 2 cups beef stock
- 2 bay leaves
- Fresh rosemary
- Fresh thyme
- Salt and black pepper, to taste
Instructions
- Gather all ingredients and prepare by dicing onions, chopping carrots, celery, and mincing garlic.
- In a Dutch oven over medium-high heat, warm olive oil. Season lamb shanks with salt and pepper, then sear until browned on all sides (5-7 minutes). Remove and set aside.
- In the same pot, add onions, carrots, celery, and garlic; sauté until softened (about 5 minutes). Stir in tomato paste.
- Pour in apple vinegar and beef stock; scrape any browned bits from the pot. Add bay leaves, rosemary, and thyme.
- Return lamb shanks to the pot ensuring they are submerged in liquid. Bring to a boil then reduce heat to low.
- Cover and simmer for 2-3 hours until meat is tender or alternatively cook in an oven at 325°F (160°C).
