  • 2 cups apple vinegar
  • 2 cups beef stock
  • 2 bay leaves
  • Fresh rosemary
  • Fresh thyme
  • Salt and black pepper, to taste

Instructions

  1. Gather all ingredients and prepare by dicing onions, chopping carrots, celery, and mincing garlic.
  2. In a Dutch oven over medium-high heat, warm olive oil. Season lamb shanks with salt and pepper, then sear until browned on all sides (5-7 minutes). Remove and set aside.
  3. In the same pot, add onions, carrots, celery, and garlic; sauté until softened (about 5 minutes). Stir in tomato paste.
  4. Pour in apple vinegar and beef stock; scrape any browned bits from the pot. Add bay leaves, rosemary, and thyme.
  5. Return lamb shanks to the pot ensuring they are submerged in liquid. Bring to a boil then reduce heat to low.
  6. Cover and simmer for 2-3 hours until meat is tender or alternatively cook in an oven at 325°F (160°C).
