Ingredients
- 1 tbsp olive oil
- 1 cup dry green or brown lentils
- 4 cups vegetable broth
- 2 carrots, sliced
- 1 onion, diced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes
- 4 large potatoes, peeled and chopped
- ½ cup milk
- 4 tbsp butter
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until soft.
- Stir in minced garlic and cook for another minute.
- Add lentils, diced tomatoes (with juice), vegetable broth, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 25-30 minutes until lentils are tender.
- Boil chopped potatoes in salted water until tender; drain.
- Mash potatoes with butter, milk, salt, and pepper until smooth.
- Serve lentil stew generously over mashed potatoes.
