  • 1 tbsp olive oil
  • 1 cup dry green or brown lentils
  • 4 cups vegetable broth
  • 2 carrots, sliced
  • 1 onion, diced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 large potatoes, peeled and chopped
  • ½ cup milk
  • 4 tbsp butter

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until soft.
  2. Stir in minced garlic and cook for another minute.
  3. Add lentils, diced tomatoes (with juice), vegetable broth, thyme, bay leaf, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for about 25-30 minutes until lentils are tender.
  5. Boil chopped potatoes in salted water until tender; drain.
  6. Mash potatoes with butter, milk, salt, and pepper until smooth.
  7. Serve lentil stew generously over mashed potatoes.
