  • 1 tablespoon cornstarch
  • 1/4 teaspoon lemon zest
  • 2 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/4 cup granulated sugar

Instructions

  1. In a bowl, mix flour, powdered sugar, and salt. Cut in butter until crumbly. Form into a ball, wrap in plastic, and refrigerate for 30 minutes.
  2. Preheat the oven to 350°F (175°C). Roll dough to about 1/8-inch thick and cut out circles.
  3. Bake cookies on parchment-lined sheets for 8-10 minutes until lightly golden. Cool completely.
  4. For the lemon filling, combine lemon juice, sugar, egg yolk, cornstarch, and zest in a saucepan over medium heat until thickened.
  5. Beat egg whites with cream of tartar until stiff peaks form. Assemble cookies with lemon filling topped by meringue.
  6. Broil for 1-2 minutes until meringue is golden.
