  • 1 pound Italian sausage (beef, turkey, or chicken)
  • 4 tablespoons olive oil
  • 1 large onion (chopped)
  • 2 large carrots (chopped)
  • 3 stalks celery (chopped)
  • 1 large red bell pepper (chopped)
  • 1 large green bell pepper (chopped)
  • 2 medium zucchini (sliced)
  • 6 cloves garlic (minced)
  • ½ cup dry apple vinegar
  • 6 cups chicken broth
  • 2 cans tomato sauce
  • 1 can diced fire-roasted tomatoes
  • Dried Italian seasoning
  • Crushed red pepper flakes
  • 1½ cups dried small pasta
  • Fresh parsley (for garnish)

Instructions

  1. In a Dutch oven over medium heat, brown the Italian sausage until no longer pink. Drain and set aside.
  2. In the same pot, heat olive oil and sauté onions for about 4 minutes until soft.
  3. Add carrots and celery; cook for another 4 minutes until tender.
  4. Stir in red and green bell peppers and zucchini; cook until all vegetables are tender.
  5. Add garlic and apple vinegar; bring to a boil.
  6. Pour in chicken broth, tomato sauce, diced tomatoes, Italian seasoning, and crushed red pepper flakes; stir well.
  7. Return cooked sausage to the pot, bring to a boil again, then reduce heat and simmer uncovered for about 10 minutes.
  8. Add pasta and cook for another 10 minutes or until desired doneness.
  9. Stir in chopped parsley and season with salt and black pepper before serving.
