- 2 lbs beef chuck or stew meat, cut into 1-inch cubes
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced (plus extra for naan)
- 1 inch piece fresh ginger, grated
- 2 tbsp tomato paste
- 1 can (14 oz) crushed tomatoes
- 2 cups beef broth
- 1 cup coconut milk
- 1 tbsp curry powder
- 1 tbsp garam masala
- 1 tsp ground cumin
- 1 tsp coriander powder
- 1 tsp turmeric
- 1 tsp chili powder (optional)
- Salt and black pepper, to taste
- Fresh cilantro, chopped, for garnish
- Cooked basmati rice, for serving
- For Garlic Naan: 2 cups all-purpose flour, 1 tsp sugar, 1 tsp salt, 2 tsp active dry yeast
Instructions
- Heat vegetable oil in a large pot over medium heat. Sauté finely chopped onion until translucent.
- Add minced garlic and grated ginger; sauté until fragrant.
- Brown beef cubes seasoned with salt and pepper in the pot for about 5-7 minutes.
- Stir in tomato paste; cook for another minute before adding crushed tomatoes and beef broth.
- Mix in spices and let the curry simmer gently for at least 45 minutes until beef is tender.
- For naan, combine flour, sugar, salt, and yeast in a mixing bowl. Gradually add warm water and knead until smooth. Let rise for an hour.
- Roll out dough into flat circles; cook on a heated skillet until golden brown on both sides.
