  • 12 tablespoons very cold unsalted butter
  • ½ cup very cold heavy cream
  • 2 large eggs
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream
  • 1 tablespoon maple syrup
  • pinch of kosher salt

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine flour, sugar, baking powder, chai spice blend, and salt.
  3. Add cold butter cubes; pulse until mixture resembles coarse crumbs.
  4. In a bowl, whisk together heavy cream, one egg, and egg yolk; chill in the freezer.
  5. Slowly add cream mixture to dry ingredients; pulse until dough forms.
  6. Shape dough into a disc and chill in the freezer for 30 minutes.
  7. Roll out dough to desired thickness; cut into wedges or strips.
  8. Brush with reserved egg white before baking for 20–22 minutes until golden brown.
  9. For the glaze, mix powdered sugar, chai spice blend, vanilla extract, heavy cream, maple syrup, and salt until smooth.
  10. Dip warm scones into glaze and let them set before serving.
